The new global trends in the chocolate market reflect the segmentation of modern society. These demands help preserving the rain forests on the planet.

The Brazilians have been used to sugary products, but this taste is evolving thanks to the introduction of new,bitterer chocolates with a high cocoa content – above 60%.

The secret of such chocolate is its considerable flavonoid content. A moderate consumption of flavonoids helps to reduce blood pressure and bad cholesterol, and it stimulates the brain production of serotonine, a substance involved in stress regulation whichboosts the sensations of pleasure and well-being and has a positive effect against depression.

According to some research published by the American Dietetic Association (ADA) in 2003, bitter chocolate with high cocoa content and without added fats (such as milk) is good for health, which confirms previous medical researches.
